This keto chocolate chia pudding is an indulgent way to start the day. Chia puddings are an easy make ahead low cab breakfast – they are perfect to prepare in the evening, leave it in the fridge for the chia seeds to do their magic and then the next morning you have a healthy, hearty portable breakfast ready and waiting for you.

Chia pudding recipes are easy options to meal prep that are low in total carbs. You can make a big batch over the weekend and then portion out into individual servings to satisfy your sweet tooth as needed through the week or to grab and go as an instant breakfast.

I simply stir the basic ingredients for the creamy keto chia pudding together in a bowl, but you can feel free to pop it into a blender of food processor, before moving it to a bowl or mason jar, for the end result to be completely smooth.

I’m often asked whether chia seeds are actually low carb and keto diet approved or not. And, the answer? Yes! They are a high fiber, nutritious powerhouse and can definately be included in a low carb, ketogenic diet.

There is 1 net carb per tablespoon of chia seeds. So you can adapt your breakfast bowl to have 2 to 4 tablespoons of chia seeds, or net carbs, depending on how many grams of carbs you usually consume in a day.

Here are some ideas for simple ingredients to mix through and top your keto chocolate chia pudding with:

Milk – you can use whatever type of milk you usually enjoy in your diet including non-dairy milks such as unsweetened almond milk, cashew milk or coconut milk

Cream – instead of the full cup of milk, you can use 3/4 cup milk and 1/4 cup of heavy cream, heavy whipping cream or coconut cream for added healthy fats and luxuriously creamy pudding.

Yogurt – you can also substitute some of the milk in the keto chia pudding recipe for a low carb yogurt such as plain, natural or Greek yogurt.

Sugar Substitute – you can use stevia, as I have done, or whatever keto sweetener you usually use such as liquid stevia, sugar free maple syrup or monk fruit sweetener. You could also flavor the keto pudding with vanilla extract or even a pinch of salt to help bring out the sweetness of the simple treat.

Chocolate – I have used unsweetened cocoa powder in the chocolate pudding but you can use cacao powder instead or mix through a row of grated low carb dark chocolate or even indulgent cacao nibs.

Berries – you can mix through or top your low carb chia seed pudding with a handful of fresh fruit such as keto friendly berries.

Protein powder – in this instance, protein powder turns the chia pudding into a meal that’s high in grams of protein, use a keto friendly protein powder to keep the carb count down.

Peanut butter, almond butter or another nut butter for a chocolate peanut butter chia pudding.

Nuts – mix through or top your keto friendly pudding with almonds, macadamias or your nut of choice

Homemade chia jam

Chia Seed Jam – bring extra sweetness and berry goodness with homemade chia seed jam.

Lemon – you can make a lemon chocolate pudding by mixing through lemon zest or lemon juice.

Coconut – you can add coconut nutrition to your creamy keto chia pudding with either oil, milk or shredded coconut.

Whipped cream – for an extra indulgent chocolate chia pudding, you can finish off your perfect breakfast with a swirl of freshly whipped cream.

  • 1 Cup Almond Milk or milk of your choice
  • 2-4 Tablespoons Chia Seeds
  • 1 Tablespoon Cocoa Powder
  • 1 teaspoon Stevia or your sugar free sweetener of choice
  • 1 Scoop Keto Protein Powder
  1. Add all of the ingredients to a small bowl, mixing bowl, glass jar or mason jar.
  2. Stir until well combined.
  3. Place into the fridge for a few hours or overnight.
  4. Once thickened, enjoy as is or topped with your low carb toppings of choice.
