This broccoli slaw is so easy to prepare and it’s low carb and vegan friendly too, making it the perfect summer salad to take to picnics or potlucks as it meets most dietary requirements. 

 

How To Make A Healthy Broccoli Slaw

Ingredients for broccoli slaw

A head of broccoli is such a wonderfully versatile ingredient and this slaw is the perfect way to celebrate the healthy vegetable. I like to grate both the stem and some of the florets and then chop the rest into bite sized pieces. 

This way you get to enjoy a range of different textures in your salad, thanks to just the one ingredient. 

In this instance I chose to add lemon zest, juice, extra virgin olive oil and flaked almonds to my slaw. Here are some ideas for more ingredients to include in your healthy broccoli slaw: 

  • Salt, pepper or other seasonings 
  • Mayonnaise, Sour Cream or Greek/Natural Yoghurt for a creamy broccoli slaw (be sure to use vegan alternatives if serving to someone following a vegan diet) 
  • Onion or Garlic – raw or fried briefly to cook and crisp
  • Lime instead of lemon
  • If you’re not concerned with carbs then you can also add grated carrot, apple, chickpeas, beans or cranberries
  • Other choices for nuts and seeds include: cashews, pine nuts, sunflower seeds, pumpkin seeds, almonds
  • You can also sweeten your salad with sugar, stevia or honey (depending on dietary requirements) 
  • Cabbage – grated purple cabbage for colour would be lovely 
  • Greens – shredded kale, spinach or lettuce 

Low Carb Broccoli Slaw Recipe

  • 1 Head of Broccoli
  • 1 Lemon
  • 2-3 Tablespoons Extra Virgin Olive Oil 
  • 1/4 to 1/2 Cup Flaked Almonds
  1. Clean the broccoli and remove the stem. 
  2. Grate the stem and the grate some of the florets, chopping the others into bite sized pieces. 
  3. Move the prepared broccoli to a salad bowl. 
  4. Finely grate the zest of the lemon over the broccoli and squeeze half of the lemon juice over a sieve onto the slaw too. 
  5. Drizzle over the extra virgin olive oil, toss and add more if desired. 
  6. Scatter the flaked almonds over the salad. 
  7. Enjoy straight away or refrigerate for a few hours to allow for the flavours to develop.
