3 Ingredient Sponge Cake Recipe – Easy Flourless Paleo, Gluten Free, Low Carb & Dairy Free Cake Recipes with only 3 ingredients.

This light and fluffy 3 ingredient sponge cake is allergy friendly as it’s free from dairy, grains and gluten. 

It does make a rather small, flat disc of a cake. So, feel free to double the recipe to make two cakes to sandwich together. 

For us, we are quite happy with one sponge cake that we smother with my homemade chia seed jam as a sweet afternoon snack. 

Gluten Free Sponge Cake Ingredients

Eggs – In this recipe the eggs are separated, the whites whisked until thick and then the yolks whisked in one at a time. This results in a light, fluffy cake thanks to all the air that’s whipped into the cake batter. 

If you’re new to or nervous about separating eggs. I suggest separating eggs whenever you make scrambled eggs or an omelette, so that you can practice without a cake at stake. 

Once you get the knack of it, making cakes like this 3 ingredient sponge cake will be easy.

Coconut Sugar – Lately I’ve been loving using coconut sugar is sweet treats. You can feel free to sub in your sugar or sweetener of choice instead. If you want a extra low carb cake then just use stevia in place of the coconut sugar. 

A light coloured sugar will also result in a lighter coloured cake than the golden, caramel cake that coconut sugar creates. 

Coconut Flour – In this cake, I’ve used coconut flour as the gluten free flour. You only need a quarter of a cup to create a perfectly light cake. 

Other Ingredients – you can also add in a half a teaspoon of vanilla or lemon extract to flavour your cake.

  • 3 Eggs
  • 1/3 Cup Coconut Sugar
  • 1/4 Cup Coconut Flour
  1. Preheat the oven to 180C/350F and line a round baking tin with well greased baking paper. 
  2. Separate the eggs into two bowls. 
  3. Using an electric beater, whisk the egg whites until thick. 
  4. Whisk in the sugar until fully incorporated. 
  5. Then, whisk in the yolks, one at a time until thickened and completely mixed through. 
  6. Fold through the coconut flour, a tablespoon at a time. 
  7. Pour the cake batter into the baking tin and bake for 20 to 25 minutes or until golden and done. 
  8. Remove from the oven, allow to cool and then top with your toppings of choice.
