10 Easy Low Carb Lunch Ideas
These easy low carb lunch ideas are great to either prep ahead, keep in the fridge and enjoy for lunch. Or, make for a quick gluten free lunch.
1. Cheesy Broccoli Salad
This broccoli salad has only 4 ingredients and is perfect to make ahead, allowing the flavors to develop to a tasty lunch salad.
2. Tuna Salad
Whether in a bowl or in lettuce wraps, I often enjoy tuna salad in one way or another. Some of my favourite accompaniments with a tuna salad include:
- Avocado
- Sour Cream
- Mayo
- Spinach
- Feta or Goats Cheese
- Pesto
- Cucumber
- Tomato
- Keto friendly salad dressing
- Avocado oil or Olive oil
- Lemon Juice
3. Chicken Wraps
Lettuce cups make an easy wrap to fill with chicken. In this instance I had leftover roast chicken that I popped into the lettuce wraps.
I just went for sour cream as a topping but you could also add in any of the following ingredients into your chicken wrap:
- Mayo
- Avocado
- Chopped Tomato
- Chopped Cucumber
- Cooked, sliced onion
- Feta or goats cheese
4. Egg Roll In A Bowl
Egg roll in a bowl was my go to meal for packed lunches for ages. I’d make a batch on Sunday evenings and portion it out for lunches for days.
I’m quite happy to enjoy the meal straight from the fridge, while my Husband prefers to heat it in the microwave. (Probably more sensible!)
5. Cucumber, Avocado & Goats Cheese Salad
This salad is simple yet the flavors work so well together and create a hearty, tasty, can’t get enough of salad!
6. Steak Salad
A recent lunch inspiration, steak salad is the perfect meal for when you’re working from home. Create a steak salad with a bed of lettuce, topped with steak, vegetables and a low carb friendly dressing.
7. Tuna and Egg Salad
You’ll notice that I enjoy tuna in some variety often for lunches. In this recipe, there’s tuna and egg mixed together into a creamy dish that’s great as a topping for spinach or lettuce wraps.
8. Chicken Meal Prep
Sometimes over the weekend, I prep meal prep containers with ready to grab lunch boxes like the ones above. (Find meal prep containers on Amazon.)
The above boxes include:
- Roast chicken drumsticks/legs
- Sauteed Cauliflower
- Hard Boiled Eggs
9. 2 Minute Zoodles
Hungry for lunch but only have 2 minutes? Then 2 Minute Zoodles are perfect! Simply spiralize a zucchini and heat it with a creamy sauce and you have two minute zoodles.
You could even add a small tin of tuna for a protein rich, deliciously balanced lunch.
10. Corned Beef Meal Prep
And finally, the above meal prep containers include:

- Cauliflower Mash
- Hard Boiled Eggs
