How To Make Healthy Chocolate Pancakes
These gluten free chocolate pancakes are easy to prepare and include simple ingredients that are easy to find at a grocery store. First thing, simply start by whisking the eggs until smooth. Then, whisk in the rest of the wet ingredients, starting with your milk of choice and vanilla extract.
You can use whatever milk you usually enjoy. Full fat whole milk is higher in carbs than alternatives like unsweetened almond milk or coconut milk, so choose accordingly.
You can of course substitute with any other non-dairy milk such as soy milk, cashew milk or oat milk, depending on what you usually include in your diet.
Then, whisk in the dry ingredients, starting with the cocoa powder and stevia, or your sweetener of choice. Our ideal ratio is 2 tablespoons of raw cocoa powder to 1 tablespoon of stevia, resulting in decadently dark chocolate pancakes. You may prefer yours sweeter by adding in additional stevia.
For flour, I opted for ground almonds which results in denser pancakes than if you’d use almond meal or almond flour. But, feel free to use either.
You can make double chocolate chip pancakes by adding a half a cup of mini chocolate chips or dark chocolate chips to the batter. Or, you could break up a couple of rows of your favorite dark chocolate instead.
You can mix the chocolate through the batter or sprinkle a handful over each pancake for rich, melty fluffy chocolate pancakes.
The pancakes are naturally high in protein due to the inclusion of both eggs and almonds, you can easily elevate the protein content and create a chocolate protein pancakes recipe by adding in a half to a scoop of your favorite protein powder.
You can whisk all of the ingredients together in a bowl with a wire whisk, as I have done, or pour it all into a blender or food process for super smooth pancakes.
To make extra fluffy and light pancakes, separate the eggs and whisk the egg whites until thickened, fold in the yolks and then gently mix through the rest of the ingredients.
Heat coconut oil or a little butter in a frying pan, griddle pan, non-stick pan or crepe pan over medium heat to high heat and then, when hot, drop a tablespoon of batter per pancake.
Cook until little bubbles appear on the surface and then flip the perfect pancakes until golden and cooked through on both sides.
Keep a close eye on the pancakes so that they don’t burn and then serve with your toppings of choice and enjoy.
