I find that having the bulk of the recipe with the main ingredient as sunflower seeds helps with the costs a lot. Then, you can just add in a quarter of a cup each of whatever other chopped nuts you like.

You’ll find that this low carb diet approved homemade granola tastes even better than a traditional granola and makes one of the best quick and easy make ahead breakfast cereal options or the perfect snack.

So, here’s a full list of low carb and keto diet friendly ingredients that you can mix and match in your granola.

For bigger nuts, you’ll find that they go further, and the grain-free granola is easier to eat, if they are chopped into small bite sized pieces.

Bigger nuts can be chopped by hand or you have give them a quick chop in a food processor instead.

You can also add in a couple of tablespoons of peanut butter or almond butter if you want.

To actually make the keto cereal recipe, combine your choice of nuts, seeds, sweetener and chocolate together in a large mixing bowl.

Melt the coconut oil and then pour it over the bowl full of dry ingredients and stir until well combined.

Move the gluten-free granola to a baking sheet lined with well greased baking parchment paper and pat it down to an even layer.

Clusters out of the oven

Bake at 100C/250F for 1 hour, tossing every 20 minutes so that the sugar-free granola cooks evenly.

Allow the granola to cool once done and then break up into large pieces of crunchy clusters.  

You can make a big batch of the delicious low carb granola over the weekend to enjoy as a quick breakfast or healthy snack when hunger strikes through the week.

How to make granola

  1. Preheat the oven to 100C/250F and line a baking sheet with well greased baking parchment paper.
  2. In a large bowl, combine together the sunflower seeds, almonds, cashews, stevia, coconut, cocoa powder and cocoa nibs.
  3. Toss well to distribute the chocolate throughout the granola.
  4. Melt the coconut oil and then pour it over the granola.
  5. Move the granola to the prepared baking tray and flatten down so that it’s in a single layer.
  6. Place into the preheated oven for 1 hour, or longer, removing and tossing the granola every 20 minutes so that it cooks evenly.
  7. Cook until dried out and golden to your liking and then remove from the oven, allow to cool and then break into clusters.
  8. Store in an airtight container or mason jar and enjoy.

  • 1 Cup Sunflower Seeds
  • 1/4 Cup Sliced Almonds
  • 1/4 Cup Chopped Cashews
  • 2 Tablespoons Stevia
  • 2 Tablespoons Shredded Coconut
  • 2 Tablespoons Cocoa Powder
  • 1 Tablespoon Cacao Nibs (Or Keto Chocolate Chips)
  • 1/3 Cup Coconut Oil
