Almond Pancakes Recipe
We LOVE easy pancakes. They make a decadent breakfast, lunch or even dinner and are always greedily accepted by the kids.
These pancakes are great because they are high in protein and nourishing ingredients and make a delicious change from flour-heavy pancakes.
Keto Almond Flour Pancakes Recipe
- 3 Eggs
- ½ teaspoon Vanilla Extract
- ½ Cup Milk or Buttermilk
- 1 and 1/3 Cups Almond Flour
- Coconut oil, for frying
- Beat the eggs until smooth.
- Beat in vanilla and milk or buttermilk.
- Mix through almond flour and stir until a smooth pancake batter forms.
- Heat a little coconut oil in a large frying pan/skillet.
- When hot, drop a tablespoon of batter per pancake.
- Cook until set then flip and cook until golden and cooked through on both sides.
