Almond Pancakes Recipe

We LOVE easy pancakes. They make a decadent breakfast, lunch or even dinner and are always greedily accepted by the kids.

These pancakes are great because they are high in protein and nourishing ingredients and make a delicious change from flour-heavy pancakes.

I’m always amazed at how fluffy these yummy pancakes are… we just adore them drizzled with maple syrup and sometimes even topped with a tiny scoop of ice cream, making pancake perfection!

Keto Almond Flour Pancakes Recipe

  • 3 Eggs
  • ½ teaspoon Vanilla Extract
  • ½ Cup Milk or Buttermilk
  • 1 and 1/3 Cups Almond Flour
  • Coconut oil, for frying
  1. Beat the eggs until smooth.
  2. Beat in vanilla and milk or buttermilk.
  3. Mix through almond flour and stir until a smooth pancake batter forms.
  4. Heat a little coconut oil in a large frying pan/skillet.
  5. When hot, drop a tablespoon of batter per pancake.
  6. Cook until set then flip and cook until golden and cooked through on both sides.
