These best low carb vegetables the the perfect foods that are low in grams of carbs and can be enjoyed in countless keto meals and snacks.
You may be following a low-carb diet for weight loss or just to enjoy meals fewer carbs in your diet for various health benefits.
To start with, on a strict ketogenic diet your best best is to avoid root vegetables, such as potatoes, carrots and sweet potatoes, that are much too high in grams of carbohydrates to be included in a keto diet plan.
Broccoli
Cruciferous vegetables, including broccoli, make a great addition to a keto diet due to versatility and nutritional benefits, including being high in Vitamin C.
Enjoy a raw broccoli salad, cheesy broccoli casserole, broccoli soup, broccoli rice, broccoli quiche or simple sauteed with fried eggs for breakfast to start your day with a healthy serve of keto vegetables.
Cauliflower
Another popular cruciferous vegetable, cauliflower has a multitude of low carb uses, from turning the healthy vegetable into cauliflower rice, mac and cheese, cheesy casserole, cauliflower mash, salad or cauliflower soup.
Green Beans
Include tasty green beans in a cheesy green bean casserole or veggie stir fry full of other healthy green vegetables of your choice, such as bok choy or leafy green vegetables.
Leafy Vegetables
Including plenty of leafy greens in your diet will improve your overall health while keeping your carb count down.
Choose from green leafy vegetable options including spinach, swiss chard, bok choy, romaine lettuce, kale and any other dark leafy green vegetables you find at your local grocery store or farmers market.
Incorporate greens into a green shakshuka, green vegetable stir fry, breakfast scramble or indulgent creamed spinach.
Zucchini
Zucchini, courgette or summer squash make a good choice as a pasta alternative in zucchini noodles, which you can enjoy as 2 minute zoodles or with a creamy avocado sauce.
Another favorite of mine is simply sauteing zucchini and other low carb vegetables in olive oil or coconut oil, then making a big green shakshuka for breakfast or even a simple breakfast for dinner meal.
Cabbage
Cabbage is high in dietary fiber while being low in grams of net carbs. Enjoy with plenty of healthy fats as an alternative to noodles in a veggie or tuna casserole or as flavorsome egg roll in a bowl meal.
Mushrooms
Mushrooms are my own personal favorite vegetable. I adore fried white mushrooms with eggs for breakfast, in an omelette, creamy mushroom sauce, pizza stuffed mushrooms, cheesy gratin, soup or mushroom stroganoff.
Brussels Sprouts
Create a simple side dish with sprouts. Choose from sauteed with lemon and garlic or onion and garlic, a cheesy gratin, soup or as a hearty breakfast hash.
Avocado
Snack on avocado or incorporate the low carb vegetable into a simple salad, meal or side dish.
Peppers
While being slightly higher in carbs than the other vegetables in this list green bell peppers, yellow bell peppers and red pepper can still be included in a low carb diet without affecting your carb count too detrimentally.
Enjoy a colorful shakshuka for breakfast or salad for lunch with steak, cherry tomatoes and leafy greens.
Onion and Garlic
Add flavor to your best vegetables and low carb meals with the help of onion and garlic. Saute onion and garlic into soup, salad, stir fry, casserole or even the above pictured garlic baked brie.
