This low carb high fiber vegetables list includes low-carb diet approved foods that are all low in grams of carbohydrates while being high in grams of fiber, to help you to keep your fiber intake up while also helping you achieve your health and weight loss goals.
If you’re following a strict ketogenic diet your best best is to avoid root vegetables, such as potatoes, carrots and sweet potatoes, that are much too high in grams of carbohydrates to be included in a keto diet plan.
As you’ll see though, there’s still a rainbow of recipes to enjoy a wide variety of nutritious low-carb foods at every meal to ensure you consume enough fiber each day.
Mushrooms
Mushrooms are a good source of fiber while being naturally low in total carbs. I enjoy mushrooms fried for breakfast many mornings a week or will make mushroom casserole, a creamy sauce to go as a side with a steak or a vegetarian mushroom stroganoff. (As pictured above.)
Broccoli
Cruciferous vegetables, including broccoli, are fiber-rich foods that make a great addition to a keto diet due to versatility and nutritional benefits, including being high in Vitamin C.
Enjoy a raw broccoli salad, cheesy broccoli casserole, broccoli soup, broccoli rice, broccoli quiche or simple sauteed with fried eggs for breakfast to start your day with a healthy serve of keto vegetables.
Cauliflower
Another popular cruciferous vegetable, cauliflower is also low in grams of carbs and has a multitude of uses that won’t affect your carb intake too much on a high-fat diet, from turning the healthy vegetable into cauliflower rice, mac and cheese, cheesy casserole, cauliflower mash, salad or cauliflower soup.
Brussels Sprouts
There are lots of delicious ways to enjoy sprouts as part of a healthy diet, some of my favorites include a breakfast hash, brussels sprouts soup or cheesy gratin.
Cabbage – Low Carb High Fiber Vegetables
Cabbage is high in dietary fiber while being low in grams of net carbs and still leaving you will feelings of fullness. Enjoy with plenty of healthy fats as an alternative to noodles in a veggie or tuna casserole or as flavorsome egg roll in a bowl meal.
Avocado
Avocado is perfect to enjoy to help you meet your daily dose of fiber. Avocado makes a nutritious snack or side dish with a keto meal or you could mash one into a creamy avocado coleslaw, as a sauce with zucchini noodles or in a salad like the above pictured tuna and avocado salad.
Leafy Greens
Getting plenty of leafy greens in your diet not only has numerous health benefits for your overall health, spinach makes an incredibly easy raw or quick cook side with any meal.
You can enjoy leafy greens like spinach or collard greens simply in a salad drizzled with olive oil and topped with Parmesan cheese, pine nuts or flax seeds, mixed into a tuna salad or sauteed with fried eggs for breakfast.

Zucchini
Zucchini, courgette or summer squash make a good choice as a pasta alternative in zucchini noodles, which you can enjoy as 2 minute zoodles or with a creamy avocado sauce. You can simply make zucchini noodles (or zoodles) with a spiralizer and then cook them with your favorite pasta sauce to enjoy as part of your good health eating plan.
Another favorite of mine is simply sauteing zucchini and other low carb vegetables in olive oil or coconut oil, then making a big green shakshuka for breakfast or even a simple breakfast for dinner meal.
Other ideas include – chopped zucchini with cabbage noodles in a ricotta sauce or a three cheese & zucchini bake.
Artichoke Hearts
I like to keep bottles of marinated artichokes in my pantry as an easy option for keto-friendly foods for when I’m needing more fiber rich vegetables in my diet.
Radishes
Radishes can be chopped and included for a crunchy salad element that will keep your carbohydrate intake as low as possible. Or, if you fry or roast radishes they end up tasting very similar to fried/roasted potatoes.
Leek, Onion & Garlic
You can choose between including leek, garlic and onion in low carb dishes. All are higher in carbs than other vegetables, so only use a little – which should go a long way to adding flavor to dishes.
Green Beans
Include tasty green beans in a cheesy green bean casserole or veggie stir fry which is a great way to enjoy other healthy green vegetables of your choice, such as bok choy or leafy green vegetables.
Asparagus
When asparagus is in season you can enjoy portions of the nutritious low-carb vegetables fried with eggs, in a salad or soup.

You’ll find that low carb diet friendly berries such as a cup of raspberries or coconut foods such as unsweetened coconut meat or coconut flour are also high-fiber foods and have tremendous health benefits.
